Whipped Mascarpone Cheese Frosting

I recently had the husband of a friend reach out to me asking if I could make a Berry Mascarpone Cake for his wife’s birthday. I had never even heard of this type of cake, but I was completely intrigued and felt pretty confident that I could deliver what he wanted.

He said the previous year he attempted to make one, but it was only edible. I promised to have a tasty AND beautiful cake for him to give to his wife. I had the wife text me saying the cake was spectacular and as beautiful as a wedding cake. I’ll take that as a win.

This filling is what made the cake spectacular. If you remember, I later made little trifles for my kids with the leftover frosting and cake scraps. They were so excited to eat them and couldn’t get over how tasty they were.

This is the perfect frosting for a cake or cupcakes with berries. Or, if you’re wanting something a little more fancy, mini trifles.It would also make an incredible crepe filling. It’s refreshing and light without being greasy, and perfect for summertime.

Whipped Mascarpone Cheese Frosting

Ingredients
  

  • 16 oz mascarpone cheese
  • 3 cups whipping cream
  • 2 cups powdered sugar
  • 1 tsp vanilla
  • pinch of salt

Instructions
 

  • In the bowl of an electric mixer, place the mascarpone cheese in and whip with the whisk attachments.
  • Once smooth, scrape down the sides of the bowl, and add half of the whipping cream and half of the powdered sugar. Mix for one minute and then scrape the sides of the bowl down again.
  • Add remaining ingredients, and mix on high until stiff peaks starts to form.
  • Store covered in the refrigerator until ready to use.
