The Story Behind the Cheesecake Crepe Filling

When my oldest daughter turned 8-years-old, we gave her such an awesome birthday present. I think she would agree that her Harmon’s Kid’s cooking class was amazing. We signed her up for a week long camp, and she looked forward to it every day.

Even though my daughter looked forward to class every day, I may have been more excited. The reason I was so excited is because I got to taste test everything when I went to pick her up. Talk about getting your moneys worth.

On the last day of the cooking camp, all the parents were invited to come even earlier to watch the kids at work. Each team of kids was tasked with making two recipes. The two recipes they had to make were ice cream and crepes.

When I arrived I sat down to watch the kids at work. I was quite impressed with all of the crepe flipping skills. Even though they looked like they had it all under control, not every team did. In fact, my daughter’s teammate accidentally put balsamic vinegar instead of vanilla in the ice cream. It didn’t turn out too bad, but let’s just say I won’t be adding balsamic vinegar to my ice cream recipes anytime soon.

Finally, all of the dishes were ready to be tasted. I headed straight for them, knowing I couldn’t pass up the crepes,

The chef teacher had made this incredible filling for the crepes, and I could not get enough. I could eat this crepe filling with a spoon. It’s so incredibly tasty.

Ingredients

  • 8 oz mascarpone cheese
  • 1 cup powdered sugar
  • 1 tbsp fresh squeezed lemon juice
  • 1 tbsp lemon zest
  • 1 tsp vanilla
  • 1 cup heavy cream

Instructions

  1. 1In medium mixing bowl, mix together the mascarpone cheese and powdered sugar with a hand mixer. Mix until it is well combined and no lumps.
  2. 2Add in the lemon zest, lemon juice and vanilla. Mix well.
  3. 3Finally pour in the 1 cup of heavy cream and mix with a hand mixer until it it light and fluffy.
  4. 4Store in the fridge and serve with crepes.
