Story Behind Chocolate Peppermint Blossoms

When my mom was preparing to come to Portugal to visit, I was preparing a grocery list of things I wanted her to bring. I actually wound up ordering groceries and having them delivered to her. She brought over a ton of peanut butter, cranberry sauce, and mac and cheese.

Of course I had to browse the holiday section. I’m always looking for the Andes red peppermint chips, but they are almost impossible to find. Instead, I landed on a bag of Hershey’s Candy Cane kisses. I immediately knew I wanted to create a cookie with them and not just eat them. That actually seems weird to me that people just eat them for fun, they are definitely made to be used in baking!

I love a good chocolate and peppermint combo. So I figured why not take the classic peanut butter blossoms and make them Christmas-y. Let’s just say it took some trial and error with the cookie part, but you will definitely enjoy this recipe with the few tweaks that I made.

These cookies are easy to make and the red and white kisses just brought a huge smile to my face. I hope they will bring a smile to your face as well!

Ingredients

  • 10 tbsp butter, softened
  • 1 cup brown sugar
  • 1 tsp vanilla extract
  • cups all-purpose flour
  • ½ cup cocoa powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 24 candy cane Hershey kisses

Instructions

  • Preheat the oven to 375℉.
  • In the bowl of an electric mixer, combine the butter and brown sugar until light and fluffy.
  • Add in the egg and the vanilla and mix again until well combined. Scrape down the sides of the bowl as needed.
  • Finally, add in all of the dry ingredients and mix until just combined.
  • Roll the dough into tablespoon size balls. Place them on a cookie sheet about 3 inches apart. Bake for 6-7 minutes.
  • When they come out of the oven, immediately place one unwrapped candy cane Hershey kiss in the center, pressing lightly.
  • Let the cookies cool for about 10 minutes before removing to a cooling rack. They are best if the kiss hardens back up before serving.
