
Story Behind Chocolate Butterscotch Oatmeal Cookies
I’ve had several visitors here in Portugal. I’m always so excited for people to make the trek from the US. However, I am always unprepared for the question, “what do you want me to bring over for you?” I’ve recently been blessed with several friends and family who visited, so my baking supply has grown immensely.
I usually tell my visitors to surprise me with any type of chocolate chips. I’ve received cinnamon, milk, and lots of semi-sweet chocolate chips. In the last few months, however, my supply of butterscotch chips has exploded. Somehow I wound up with a massive supply of butterscotch chips.

I love the taste of butterscotch and use it for a few recipes, but I had been dying to make an oatmeal cookie. For some reason, I think butterscotch and oatmeal together are a match made in heaven. They work so well together.
So I decided to make my favorite oatmeal cookie and load them full of butterscotch chips and chocolate chunks. They are so tasty, and I won’t tell you have many I ate as they came out of the oven.
Since this cookie dough doesn’t need to be chilled, you can make the cookie dough and have hot fresh cookies in no time. They are great for an evening treat and they are especially delicious around Christmas.

- Butter
- Brown Sugar
- Sugar
- Eggs
- Vanilla
- Baking Soda
- Baking Powder
- Salt
- All-Purpose Flour
- Quick Oats
- Butterscotch Chips
- Chocolate Chunks or Chopped Chocolate Bar
