Cranberry Orange Bread

  • ¾ cup sugar ,divided
  • 1 egg
  • 1 cup cranberries coarsely chopped
  • zest of 1 orange
  • ¾ cup freshly squeezed orange juice about 3 navel oranges
  • 2 tbsp vegetable oil
  • 1 ½ tsp baking powder
  • 1 tsp salt
  • 2 cups all-purpose flour sifted


  • Preheat oven to 350°. Grease two mini loaf pans and set aside.
  • In a small bowl, pour 2 TBS of the sugar on top of the cranberries and set aside.
  • In a medium sized mixing bowl, place the zest of the orange, the orange juice, oil, and remaining sugar together and give it a quick mix.
  • Add in the egg and mix until combined.
  • Finally, add in the dry ingredients and mix well.
  • Gently fold in the sugared cranberries and then divide the batter evenly into your two mini loaf pans.
  • Bake for 42-45 minutes until the tops are golden and feel soft in the center.
  • Remove from pans and cool on a rack.
