Sausage Tortellini Soup

Course Soup


  • 1 roll (16 oz.) Italian flavored sausage, pork or turkey
  • 2 cans Italian diced tomatoes
  • 4 cups of chicken broth
  • 1 block (8 oz.) of cream cheese
  • 2 cups fresh spinach, chopped
  • 1 bag (19 oz.) frozen cheese tortellini
  • Shredded parmesan cheese (optional)


  • In a large stockpot, brown sausage until cooked through. Drain any excess liquid and return meat to the pot.
  • Add in tomatoes, broth, spinach, and cream cheese. Cook until cream cheese is melted, stirring and breaking up the cheese as necessary.
  • Add in the frozen tortellini, and cook until done, usually 3-5 minutes. Remove from heat once the tortellini is done to prevent it from overcooking.
  • Sprinkle with shredded parmesan, if desired.
