In a large stockpot, brown sausage until cooked through. Drain any excess liquid and return meat to the pot.
Add in tomatoes, broth, spinach, and cream cheese. Cook until cream cheese is melted, stirring and breaking up the cheese as necessary.
Add in the frozen tortellini, and cook until done, usually 3-5 minutes. Remove from heat once the tortellini is done to prevent it from overcooking.
Sprinkle with shredded parmesan, if desired.
