Deep Fried Banana Splits
Instead of going to the state fair, try making your own fried treats at home. These fried bananas are scooped up with ice cream and are the perfect summer treat.
The Story Behind the Recipe
Back when we were at Stanford, I made an amazing friend – Jessi Henri. She and I both loved baking and throwing parties- especially parties where we get to make all of the yummy food. She is pretty awesome and has made some pretty amazing food.
She introduced me to these fried bananas for banana splits. She never made them for me, but I recalled her talking about them, and I knew it was recipe I needed to try. When we moved to Utah, life became different for us an we weren’t as social. Granted, I had 5-month-old and 3 other tiny ones, so it could be that I was still in that baby fog. Maybe we weren’t as social because we couldn’t just step outside our back door to a communal gated-in playground that we shared with all of our best friends. I decided last minute one weekend, that I was going to make these fried bananas and invite others over to enjoy.

Turn of Events
It was General Conference weekend for my church. It’s a two day conference where we get to listen to our church leaders speak about Christ. It’s always uplifting and always accompanied by good food. I sent a text out to a few people telling them to bring a banana split topping, and we would enjoy deep friend banana splits on the porch.
I wanted everyone on our large porch because we were fresh out of business school with not a ton of money to furnish out house yet. We were eating off a folding Costco table! We set everything up outside and waited for people to show up.
I always get so nervous that no one is going to show. People always show up, so I don’t know why I continue to stress about it. Everything was going great until a HUGE wind storm came through. There were sprinkles and bowls flying every where. So we did what we had to do, packed it up, and went inside to our not fully furnished or fully decorated house. It was still a blast, and these banana splits were a huge hit.

Tips for the Recipe
I had a few people not really sure if these would be good. Maybe you are worried about the banana being mushy. To be honest, I’ve never had that problem. They only fry for about 3 minutes, so if you are using yellow bananas, you’ll be great!
If you fry the bananas ahead of time, just reheat them under the broiler for a few minutes or an air fryer for 5 minutes. They will taste just like they did fresh out of the hot oil.

Fried Banana Splits
Ingredients
- 12-15 bananas
- 1 ½ cups all-purpose flour
- ½ cup cornstarch
- 2 TBS baking powder
- 2 TBS granulated sugar
- 1 ½ tsp salt
- 2 tsp cinnamon
- 2 egg yolks
- 1 ½ cup club soda
- vegetable oil for frying
Instructions
- In a large stock pot, bring about 6 cups of oil to 265 degrees. While it is heating up, mix up your batter.
- In a large mixing bowl, whisk together all of your dry ingredients.
- Add in your egg yolks and half of the club soda. Whisk until combined. Gradually add in the remaining club soda, and whisk until no lumps are left.
- Once your oil has reached the desired temperature, dip each peeled banana into the batter and let excess drip off, still ensuring it is completely covered in batter.
- Slowly place about 2-3 bananas into your oil and fry for about 3 minutes or until uniformly golden brown. Remove from oil and let cool on paper towels to absorb any excess oil.
- Serve with scoops of ice cream and all of your favorite banana split toppings. Save any remaining bananas in the fridge and see note below for reheating tips.
